Diwali special savoury snack 1 - Thattai
I cant think of an exact translation from the Tamil "Thattai" into English... I guess the closest would be "flatties" or possibly "patties" - because they are patted flat with your fingers into small discs :) Thattais are available all the year round in Indian sweet shops but I think they're much nicer home-made. Some people add bits of coconut (bleagh!) to the dough but - quite apart from my dislike of coconut in certain food items - I think that's a bad idea because the thattais quite soon acquire the flavour of stale coconut. Not good!

Ingredients:
4 cups rice flour
1/2 cup urad dal flour (can be ground at home in a spice/coffee grinder, but sieve it to get the finest powder)
2 htbsp chana dal, soaked for 10 minutes in hot water
1/4 cup butter
1 tsp red chilli powder, or to taste
2 tsp white sesame seeds
Salt to taste
10 curry leaves, roughly torn (optional)
Water as required
Oil for deep-frying

Method:
1. Mix all the ingredients into a fairly stiff dough.
2. Lightly grease a clean plastic sheet.
3. Make small balls (slightly smaller than ping-pong ball size) and pat each one lightly into a circle with your fingers to make the thattais. They should be more or less even all over and approximately 1/4-cm thick.
4. Prick the thattais all over with a fork so that they dont puff up during frying.
5. Heat the oil while you are making about a dozen or so thattais. When a piece of bread dropped in the oil sizzles immediately, it is at the right temperature.
6. Carefully peel the thattais off the plastic sheet one by one and slide them into the oil. Fit in as many as your wok will comfortable take.
7. Fry the thattais on medium heat, turning them over occasionally, until they are golden brown. Remove with a slotted spoon on to absorbent paper.
8. Serve as a snack with tea/coffee, etc. Store in an airtight tin.

Paneer Tikka Masala
Paneer is a soft cheese, traditionally used in South Indian and Middle Eastern cooking. The combination of creamy paneer and crisp peppers, in a spicy tikka masala sauce, makes a quick and easy to prepare vegetarian curry

INGREDIENTS:
2 Tbsp vegetable oil
225g paneer - cut into bite sized pieces
1 Small green pepper - diced
1 Small red pepper - diced
240g tikka masala Sauce
1 tbsp fresh coriander - chopped

PREPARATION:
1. Fry the paneer in the oil, on a low heat until golden brown, remove and drain.
2. Add the peppers and stir-fry until just beginning to soften.
3. Add the sauce and paneer and simmer for 5 minutes.
4. Stir in chopped coriander and serve immediately.
Delicious served with warm naan bread, or alternatively serve in wraps with mint or tomato relish or Green Label Mango Chutney.

POTAT CURRY RECIPE

The flavor of cilantro/coriander, so widely used in Indian cuisine, lends a delightfully uniqueflavor to this favorite.Prep Time: 30 minutes,Baking Time: 30 minutes,Ingredient

List:
2 lb. chicken pieces
2 onions, chopped or pureed
2 tsp. ginger paste
2 tsp. garlic paste
1 tsp. turmeric powder
1 tsp. chilli powder
1 tsp. cumin powder
1 tsp. coriander powder
1 tomato, pureed
1 tsp. salt or to taste
Cilantro/coriander leaves
1 tbsp. oil

Instructions:

Heat oil in a saucepan and fry the onions, ginger and garlic, together with cumin and coriander
powders and cilantro/coriander leaves for five minutes on low heat. Add tomato, chicken,
turmeric and chilli powders and salt together with half a cup of lukewarm water and cook on
medium low heat for half an hour, keeping the saucepan covered with a lid.

Shahi Mutton


Ingredients:

1 1/2 lbs. of Mutton (Lamb or Goat)
3 medium Onions (thinly sliced)
1 oz. of Almonds (Baadaam)
4 cloves of Garlic (Lasan)
1 oz. of Coriander Seeds (Dhania)
1 tsp. of Red Chilli Powder (Pisi Lal Mirch) (or to taste)
1/2 tsp. of Garam Masala (whole mixture)
Salt (to taste)
1 pinch of Saffron (Zafran)
3/4 cups of Plain Yogurt
3/4 cup of Cream
1/2 cup of Cooking Oil

Method:

Wash the mutton well, dry and set aside.
Blend the coriander seeds, 1 onion, almonds and garlic together.
Marinade the mutton in this mixture for about 2 hours.
Heat the oil and fry the remaining onions and set aside.
Add the mutton to the oil and fry until the liquid dries up.
Add 3/4 cups of hot water and simmer until the meat is almost done or (3/4 cooked) OR pressure cook at 15 psi for 20 minutes.
Reduce the pressure.
Add salt and pepper.
Uncover and dry the liquid.
Add the beaten yogurt and fry until the oil separates.
Add the fried grounded onion.
Beat the cream for about 5 minutes or until it is to a thick consistency.
Add the soaked or ground saffron.
Mix it with the cooked mutton.
Add the garam masala and bake at 250 degrees F for 1/2 hour.
Serve garnished with chopped coriander leaves.
